Coconut sugar is made of pure and freshly harvested coconut nectar from the coconut flower. It has a neutral Ph range and no sign of fermentation when processed so that it can be granulated.
For this product the freshly harvested coconut sap was processed immediately to avoid further fermentation and to avoid using chemical preservatives or anti-fermentation agent which is commonly used by conventional producers. The fresh coconut nectar was processed immediately through natural evaporation at a desired controlled temperature to maintain its nutrients until it becomes granules.
Tests done by the Food and Nutrition Research Institute revealed, that coconut sugar has a low Glycaemic index (GI) of 35 compared to that of regular sugar’s GI index of 70. Low Glycemic (low glucose) Index food is good for proper control of diabetes mellitus and has shown to lower the LDL (low density lipoprotein) cholesterol or known as the bad cholesterol. Coconut Sugar also helps to prevent cancer and it’s good for weight maintenance, thus preventing obesity or being overweight.
